I'd say that you have a few choices for singletrack in Vail. The mountain is great. Check out Onza Alley for a great route in the trees. Also, North Trail and Son of Middle Creek are singletrack classics. They can both be accessed from Red Sandstone TH on the north side of I-70.
As for renting bikes - check out the Vail Velo Bike Shops page: http://www.vailvelo.com/page/bike-shops. I believe that all of the shops in Vail rent bikes.
